Easy Chicken Flatbread

A versatile flatbread for every taste


I’ve been making this chicken flatbread for a few years now, and every time I make it I can’t believe how easy it is to put together. Even more surprising is how it can be transformed into a completely new taste by changing the sauce or a few toppings. And while this may not sound like a ground breaking discovery, it does make a weeknight dinner a lot easier when one family member wants Italian and the other wants Thai.

One of the things I hate when I launch into a recipe is to scroll down … and down … and down until I find the actual recipe.  Yes, I love all the beautiful pictures and want to hear how good it tastes but …. Give me the recipe already. So this intro may be short, but let’s get to what you want to know!

What you need:

  • A pre-made flatbread, pita bread or naan, quantity depends on how many you are serving
  • Olive oil, to drizzle on bread
  • 1-2 cooked chicken breast, sliced
  • 8 oz bag shredded mozzarella cheese (or any shredded cheese)
  • 1-2 red, green or any color pepper you want (optional)
  • 1 onion (optional)

Recommended sauces and toppings depending on what flavor you want:

  • Ranch dressing
  • Spicy ranch dressing
  • Salsa
  • Sour cream
  • Thai chili sauce
  • Thai peanut sauce
  • Marinara sauce
  • Bacon pieces
  • Avocado, sliced
  • Scrambled egg

What to do:

  1. Preheat oven to 375
  2. Lay out bread on cookie sheet(s)
  3. Drizzle olive oil on bread
  4. Cover bread with chicken slices, peppers, onion and cheese
  5. Bake for 10 minutes or until cheese is melted
  6. Put on your toppings that didn't need to be baked and your sauces (see below)

Now what?

  • Add marinara sauce for a Italian flavor
  • Add avocado, bacon and either ranch or spicy ranch for an American taste
  • Add either the Thai chili, Thai peanut or both sauces for a Thai experience
  • Add sour cream, avocado and salsa for a Mexican craving
  • Leftovers? This reheats so well, add a scrambled egg on top for a breakfast pizza or fold it for a breakfast sandwich

With the versatile and simple base of chicken and cheese, the possibilities are endless and you can satisfy a household or your pickiest eater. What combo do you like best? Do you have another variation I missed?
